Ingredients (serves 2)

For the fruit compote

  • 70ml apple juice

  • 30ml water

  • Pinch of grated nutmeg

  • ¼ teaspoon cinnamon

  • 50g assorted dried fruit

  • The peel of ¼ lemon, finely grated

For the porridge

  • 75g rolled oats

  • 225ml skimmed milk

  • 225ml water

  • Pinch of cinnamon

Preparation and cooking time: 25 minutes

  1. In a pan, heat up the apple juice and water with the nutmeg and cinnamon.

  2. Add the dried fruit and lemon zest and simmer gently for about 20 minutes, or until the fruit is soft.

  3. Mix together the rolled oats, cinnamon, skimmed milk and water in a separate, heavy-based pan and gently bring to the boil, stirring frequently.

  4. Simmer the oat mixture for about 5 minutes until the desired consistency is reached.

  5. Serve the porridge and top with the cooked dried fruit.
