Ingredients (serves 4)

  • Spinach leaves

  • 2 hard-boiled sliced eggs

  • 4 rashers of crisp streaky bacon - grilled then crumbled

  • 4 button mushrooms - sliced finely

  • 1 tbsp dijon mustard

  • 1 tsp cracked black pepper

  • 1 handful of chopped basil

  • 2 egg yolks

  • 80ml balsamic vinegar

  • 2 shallots - finely chopped

  • 250ml olive oil

  • Salt & pepper

  • Dash of worcestershire sauce

  • Optional - Walnuts to garnish

 

Method
Preparation and cooking time: 25 mins

  1. Place the mustard, basil, black pepper, shallots, egg yolks, Worcestershire sauce and vinegar in a blender

  2. Blend on high speed and slowly add the oil (add some water if dressing becomes too thick)

  3. Wash and dry the spinach leaves before laying them on a plate

  4. Add the sliced egg, bacon and mushrooms to the spinach

  5. Drizzle the salad with the dressing
