Ingredients (serves 2)

  • 2 tbsp. freshly peeled and grated ginger

  • ½ medium pineapple, peeled, cored and chopped, or the equivalent of frozen pineapple

  • Demerara sugar to taste

  • Handful of ice cubes to serve

Method

  • Place the ginger, pineapple and a teaspoon of sugar in a blender, and puree until smooth

  • Add a small amount of water into the blender if the puree is too thick

  • Add more sugar if you prefer a sweeter drink

  • When the drink is to your taste, half fill a glass with ice shavings or cracked ice, fill the glass with ice shavings, or cracked ice, fill the glass with puree, stir and serve immediately
