Ingredients (serves 4)

  • 6-8 bacon rashes

  • Knob of butter

  • ⅛ cup breadcrumbs

  • 1 tbsp cream cheese

  • 50g parmesan cheese - grated

  • 50g emmental cheese - grated

  • 100g mature cheddar cheese - grated

  • 300ml milk

  • 1 tbsp flour -sifted

  • 250g macaroni

  • 2 tbsp dijon mustard

  • Salt and pepper

Preparation and cooking time: 45 mins

  1. Preheat the oven to 180c

  2. Fry/grill the bacon until crisp and break into pieces

  3. Cook the macaroni thoroughly (roughly 15 minutes), this will absorb the cheese sauce when baking

  4. For the cheese sauce, melt the butter whilst slowly adding the flour and gently warming the milk

  5. Gradually add the milk, stirring constantly then lightly season and add the mustard

  6. Add all the remaining cheese to the pan in small amounts, melting thoroughly

  7. Leave on a gentle boil until it has reduced by one third

  8. Stir in a knob of butter

  9. Butter a casserole dish, add the bacon and cooked macaroni

  10. Cover with the cheese sauce then sprinkle with parmesan and breadcrumbs

  11. Bake for 20 minutes until golden brown
