Ingredients (serves 4)

  • 600g tomatoes (baby plum, beef and vine-ripened Italian)

  • Half a medium red onion, finely sliced

  • Half a green pepper, finely sliced

  • 70g pitted black olives

  • Juice of ½ lemon

  • 200g feta cheese

  • Handful of fresh oregano

For the dressing

  • 1 clove of garlic

  • 2 tsp red wine vinegar

  • 2tsp olive oil

  • Salt and pepper



  • Use a variety of tomatoes for colour and texture, and slice them up.

  • Add the onion and pepper before squeezing the olives in to your hands. Then add these to the salad.

  • Next, crumble the feta cheese on top and squeeze the lemon juice over it.

  • To make the dressing mash the garlic and then add the vinegar and oil before seasoning to taste.

  • Once made, drizzle the dressing over the top and then sprinkle the oregano to finish.
