Ingredients (serves 4)

  • 2 duck legs

  • 2 handfuls of sea salt

  • Black pepper

  • 4 spring onions, sliced lengthways

  • ½ cucumber, seeds removed and sliced lengthways

  • Plum sauce

  • Chinese pancake wraps



  • Preheat your oven to 220 degrees C.

  • Rub the duck legs generously with the sea salt and place in a deep metal roasting dish.

  • Add the pepper and place the dish in a hot oven for 1 hour.

  • You will know when it’s ready because the skin will be dark golden and crackling crisp.

  • Take out of the oven and shred the duck off of the bone with a fork. Serve with onions, cucumber, pancakes and plum sauce.
